RAINBOW PEPPER SALAD (serves 1) 1/4 cup green bell pepper, diced 1/4 cup red bell pepper, diced 1/4 cup yellow bell pepper, diced 1/4 cup red cabbage, diced 2 tablespoons of green onion, sliced 1/8 teaspoon crushed basil 1/8 teaspoon minced garlic 1 tablespoon of white wine vinegar 1/2 teaspoon of olive oil Mix all ingredients in a mixing bowl, chill for 1 to 3 hours, and serve. Can be served in small bowls, on a lttuce leaf, or inside a hollowed out tomato or any color bell pepper. If you serve it inside a pepper, cut a thin slide off the bottom of the pepper so it will stand upright.
