Artichoke Green Chile Parmesan Dip

Includes the classic artichoke green chile cheese dip recipe and a lower fat version that eliminates the cheddar cheese topping and substitutes low fat yogurt and fat free mayonnaise for the regular mayonnaise.

Artichoke Green Chile Dip Ingredients
- 14 ounces of artichoke hearts (marinated or not)
- 1 six ounce can of sliced black olives (optional)
- 4 ounce can of whole green chiles
- 1 cup of grated Parmesan cheese
- 1 cup of mayonnaise
- 2 cloves of garlic, minced
TOPPING:
- 10 ounces of mixed shredded cheddar and jack cheese

Artichoke Green Chile Dip Instructions
Preheat oven to 350 degrees F. Drain and chop the artichoke hearts. Rinse the green chiles, remove their seeds and membranes, and chop. MiX the artichoke hearts, green chiles, black olives, parmesan cheese, and mayonnaise. Spread the mixture in an 8 ounce round making dish. Bake in the preheated 350 degree oven for about 20 minutes. Serve warm with corn chips, assorted crackers, or breadsticks for dipping.

Low Fat Artichoke Green Chile Dip Ingredients
2/3 cups of fat free mayonnaise
1/2 cup of plain low fat yogurt
14 ounces of artichoke hearts
1 can of chopped green chiles
2 cloves of garlic, minced
1/4 teaspoon of hot sauce
6 tablespoons of parmesan cheese (mix in)
2 tablespoons of parmesan cheese (topping)

Low Fat Artichoke Chile Dip Instructions
Mix and make as in above recipe, except sprinkle parmesan cheese topping on after baking and broil 1 or 2 minutes to brown.
